These Apricot Chocolate Chip Granola Bars are an easy, healthy snack for after school, on the go, or any time.
They are made with rolled oats, chopped dried apricots, shredded coconut for texture, and chocolate chips for a sweet surprise. Feel free to substitute olive oil if you don’t have coconut oil.

1/2 cup (106 grams) packed dark brown sugar
3/4 cup (85 grams) white whole wheat flour
1½ cups (149 grams) old-fashioned rolled oats
1/4 teaspoon sea salt
1/2 teaspoon baking powder
2 large egg whites, lightly beaten
1/4 cup (57 grams) unsweetened applesauce
2 Tablespoons coconut oil
1 teaspoon vanilla extract
1/2 cup (85 grams) chocolate chips
1/2 cup (75 grams) chopped apricots
1/4 cup (21 grams) shredded coconut
8×8″ or 9×9″ (20×20 cm or 23×23 cm) baking pan
