A buckeye is a peanut butter ball dipped in chocolate. These Mini Buckeye Tarts are mini chocolate tart shells filled with peanut butter and drizzled in more chocolate. Works for me!

3/4 teaspoon Kosher Salt

1 teaspoon Vanilla Extract
2/3 cup (57 grams) Unsweetened Cocoa
1½ cups (405 grams) Creamy Peanut Butter (like Skippy or JIF, no all-natural)
4 Tablespoons (57 grams) Unsalted Butter, room temperature
Pinch of Kosher Salt
1½ cups (170 grams) Powdered Sugar
About 1/2 cup (3 oz, 85 grams) good-quality Melting Chocolate (semi-sweet or dark)
