These Strawberry Crumble Bars are gluten-free, healthy, and make a great snack on the run.
Strawberry filling is sandwiched between layers of an oatmeal streusel crumb topping.

1 cup (99g) old fashioned rolled oats
1/2 cup (48g) almond meal
1/4 cup (28g) coconut flour
3 tablespoons (38g) cane sugar
1/4 teaspoon lemon juice
1/4 teaspoon vanilla extract
4 tablespoons (59ml) coconut oil
2 cups fresh (334g) strawberries, sliced
2 teaspoons corn starch or arrowroot
3 teaspoons agave or maple syrup
1 teaspoon vanilla extract
8×8″ (20×20 cm)
