These Linzer Cookies are special enough to earn a place on your holiday cookie menu!
If you’re not familiar with them, Linzer cookies originated in Austria. The rich buttery dough is made with ground walnuts (or almonds or hazelnuts), lots of cinnamon and spices and filled with raspberry jam. Then they are dusted with powdered sugar.
The “snowy” top and the red jam peeking out from the center cutout make these cookies look very festive for the holidays.

Preheat oven to 350˚F (325˚F convection) (180°C/165°C)
1½ cups (162 g) walnut halves
2 cups (241 g) all purpose flour
1½ teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon grated lemon rind
1/4 teaspoon ground cloves
1/4 teaspoon fine sea salt
1¼ cups (2½ sticks, 284 g) unsalted soft butter
3/4 cup (149 g) granulated white sugar
1 egg yolk
1 teaspoon vanilla
1/4-inch (6 mm) thick
2-inch (5 cm) cookie cutter
1 cup (308 g) raspberry jam
